Lemon Chess Pie for Old Souls
©Katherine Dunn / Apifera Farm 2014

What you need
1/2 cup [1 stick] melted butter
4 beaten eggs
1 cup sugar
2 tablespoons flour
1/4 teaspoon salt
1/3 cup lemon juice
Zest of one lemon
Option: 2 teaspoons vanilla

Prep

Consult with chickens to
ensure there are fresh eggs.

Some Chess Pie recipes have
many steps. But we farmers
have no time for this, so our
recipe only has one preliminary
step:

Go for a five minute walk,
with eyes wide open. Notice
the birds and the sky. Feel a
leaf. Your senses will nourish
your old soul. You’ll feel very
enthusiastic and are now ready
to bake a pie with the soul
of a child.

Final steps

Roll a lemon on the counter to
warm it up for squeezing. The lemon
will laugh and possibly sing. Lemons
like to have fun and want you to be
happy. They also love opera, so
consider playing one for them.

Mix the beaten eggs and
sugar in a bowl. Whisk in
flour, salt, lemon juice
and zest–and vanilla if you
choose. Pour filling into the
crust. Sprinkle with cinnamon.

Bake in middle of 350 degree oven
for 30 minutes, until set: The pie
will barely jiggle in center when
done. This pie is wonderful warm,
lightly chilled and it freezes well.

Tip
Take a nap after
eating to ensure
further soul
rejuvenation.
